Food for Thought: Fueling students’ minds

College of Education and Human Development to create cookbook for students

Food fuels the mind just as much as the stomach, something that motivated Governors State University’s (GovState) College of Education and Human Development (CEHD) to launch its “Food for Thought” project.

An initiative created by CEHD Dean Shannon Dermer and supported by the Office of the Provost, “Food for Thought” recognizes students’ need for healthy food or fuel to perform academically.

Cooking may be the last thing on students’ minds, especially when they’re juggling a lot, their jobs and studies and, for many, childcare or eldercare, so CEHD is curating a cookbook for students that offers healthy options for those on a budget and often under a time crunch.

Once completed, the cookbook will feature simple, inexpensive recipes submitted by GovState faculty and staff, as well as tips, tricks and health information to help students as they prepare nutritious food to support them on their academic journeys.

Currently, the goal is to complete the cookbook in time for students’ return in the fall, about a couple weeks into the semester. Though, the cookbook is just the beginning for “Food for Thought.” 

CEHD will offer future activities and events to support the project. Though still in the planning stage, cooking demonstrations and giveaways of cookware and ingredients are possibilities.
